At Addis International Catering, we are committed to providing our customers with the highest levels of hygiene and food safety. We understand the importance of protecting our customers from food-related illnesses, and we take every precaution to ensure that all of our food is prepared in accordance with the latest hygiene standards.

AIC handles its food safety processes as per IFCA/IFSA/AEA World Food Safety Guidelines and HACCP requirements. All the processes also comply with related national and international legal requirements including Ethiopian Food, Medicine and Health Care Administration and Control Proclamation No 661/2009.

In support the company has a well organized Quality and Food Safety Department with the objective of assuring hygiene and food safety in the production processes. Responsibilities of the department includes keeping all HACCP procedures up to date, training staff, performing supplier risk assessment and conducting monthly internal hygiene audits.

Moreover the company has an in-house laboratory which includes microbiological analyses by taking  samples from raw material, ready produced meals, water, ice, equipment swabs and employee hand swabs, all according to established sampling plan.

AIC is certified for Laboratory Management System ISO/IEC 17025 on October 16, 2015.

Sensory evaluation of all airline meals is done weekly with Quality and Food Safety, Production, Purchasing, Operations, and GM in attendance. The evaluation is based on the following  criteria; Meal Specifications, Appearance, Taste, Texture and Weight.

The company food safety system includes all HACCP   principles with CCP’s and SOP’s.​ Microbiological testing standards and microbiological guidelines are as per international standards.


AIC Laboratory does microbiological testing for external  customers as well. Hilton, Sheraton, Hyatt Regency and Marriott Hotels are some of our customers in Addis  Ababa.
